E 'erupted Muffinman, websites and blogs ( gay , zucchini flowers, food and thoughts ) are full of muffins and even I could not resist. As I said in another post, most of the recipes I have never met, it was mostly common cake mixes in the form of muffins. So turning to the net I found a recipe for Moka coquinaria , together with suggestions for the perfect muffin. We did Saturday with my niece, when ready the dough base we tried a different set of toppings, some chopped dark chocolate in other jam, extra jam indeed (there were pieces!) Of plums, Mass the center of the muffins, orange marmalade others in the center and cover with chocolate pieces. In all, 11 have come and muffins are all gone. Many thanks to Mocha and referring to his presentation on tips and tricks here is the recipe for
MUFFIN PERFECT
140 gr sugar 250 gr
flour 2 teaspoons baking powder
85 g melted butter 2 eggs
200 ml milk 1 teaspoon vanilla extract

Mix together the dry ingredients on one side and those from wet ' other, then add the wet to dry and mix the minimum necessary to mix the dough, it does not matter if the lumps remain. A tip is to cool the melted butter and milk, however, use at room temperature. Once you have the dough you can add other ingredients, in my case, chocolate pieces, orange marmalade and plum jam, but also pieces of fruit (eg berries or banana) or fruit dry. The important thing is, again, mix very little. Bake at 200 degrees about 15 minutes, do not brown too much.
